Brevity Cake Recipe with 3 Ingredients

This recipe for a brevity cake of cornstarch I got from my grandma's recipe booklet, where it was just written 'brevity cake'. I realized it was a quick cake to bake and very economical, so I put my faith in it and didn't it turn out wonderful? It resembles sponge cake, but it is prepared with cornstarch instead of wheat flour.

Ingredients for making Brevity Cake with 3 ingredients:
2 cups of cornstarch (corn starch) - 300 g
1 cup sugar - 180 g
5 eggs
How to make Brevity cake with 3 ingredients:
Start by separating the whites from the egg yolks and beat the whites with an electric mixer for 2-3 minutes or until just set. This is very important to get a big, fluffy cake, as this is a cake without yeast.
Tip: To see if the egg whites are on point, tilt the bowl a little or turn it upside down: the egg whites should not run out!
While beating the whites add the egg yolks one by one, beating between each addition. When finished with the egg yolks, add the sugar little by little and also keep beating. The mixture will be well sanded and creamy.
Tip: At this point, to give an extra taste, you can add 1 teaspoon of vanilla essence or lemon zest along with the yolks.
Finally, add the sifted cornstarch about half a cup at a time and mix gently with a spatula or whisk, do not beat with an electric mixer, until well incorporated and get a light and creamy cake batter.
Tip: To ensure a very fluffy cake and that it doesn't wilt after baking, remember that the raw dough must be well sanded and voluminous, that is, filled with air.
Grease and flour a medium cake pan and place the batter for this brevity cake very gently. Bake in a preheated oven at 180ÂșC for 35-40 minutes. Remove and let cool a little before unmolding.
Tip: Prefer to use a 22 cm cake tin with a hole in the middle, so the cake will grow more evenly.
